Chicken & Mushroom Stroganoff with Herbed Rice


CHICKEN & MUSHROOM STROGANOFF WITH HERBED RICE


INGREDIENTS (SERVES 4)

Stroganoff
Boiled Boneless Chicken- 500g (sliced lengthwise after boiling) Mushroom- 200 g (Sliced lengthwise) Onion- 4 Medium Size (Sliced lengthwise) Garlic- 1 tbsp (Finely chopped)
Chilly Powder- 1 tsp Black Pepper Powder- 1/2 tsp
Corn Flour- 2 tsp Sour Cream- 1/2 cup (method mentioned below)
Chicken Stock / Water- 1.5 cup Salt- as required 
Herbed Rice Rice- 2 cups (Basmati or any suitable rice)
Oil- 2 tbsp
Butter 2 tbsp
Oregano- 1 tsp Garlic- 2 tbsp (Finely Chopped) Chilly Flakes- 1 tsp
Parsley- to garnish
Salt and Black pepper- as required


Method of Preparation- Stroganoff
  1. Boil water with salt and cook the chicken. Remove the chicken from the water when tender and reduce the stock to 1 cup and save the stock for later.
  2. In order to prepare the sour cream, add 1 tbsp of Vinegar and a teaspoon of salt to the fresh cream. Do not stir, keep it in the refrigerator for 20 mins for it to set. After 20 mins, take it out and whisk it until it thickens(Keep this ready, so that you have the sour cream ready when required).
  3. In a pan, add 1 stick of butter and 2 tbsp of vegetable oil.
  4. Add garlic, saute till soft and then add the the sliced mushroom. Saute till soft and the water drains from the mushroom and evaporates.
  5. Add the onions to this mixture and saute till it becomes translucent. Add salt as required.
  6. Add 2 tsp corn flour to it, and dry out the mixture without any water.
  7. Add the chilly powder & pepper powder at this stage.
  8. Add the sliced boiled chicken and mix well to combine.
  9. Add the chicken stock/water to the pan and bring the mixture to boil for 2-3 minutes.
  10. Once the mixture comes together and turns into a slightly thick gravy, lower the flame and add the prepared sour cream to the pan and mix to combine.
  11. Switch after the flame within 4-5 mins.
  12. This delicious chicken and mushroom stroganoff is ready to be served.


Method of Preparation- Herbed Rice
  1. Wash the rice thoroughly, soak and set aside for 15-20mins.
  2. Boil water with salt and when it comes to boil, add the rice and cook until 85% cooked.
  3. Drain the rice and pour some cold water to avoid rice from being sticky.
  4. In a pan, add 2 tsp of butter and 2 tbsp of vegetable oil.
  5. Add garlic, saute till the raw smell reduces and then add the oregano and chilly flakes.
  6. Add the cooked rice & salt as required and mix well to combine.
  7. Once rice is coated well with the herb mixture, cook for 4-5mins and switch off flame.
  8. Enjoy the herbed rice with the delicious stroganoff.
